Beer Battered Rock Oysters
Fresh Rock Oysters,
1 cup flour,
1 stubby of beer,
1/4 cup cornflour,
salt and pepper,
Oil for deep frying.
Mix the flour, cornflour beer and seasoning together.
Season extra flour on a plate.
Coat oysters with the flour mix, shake then into the batter.
Deep fry until golden (not too long as you may overcook)
Drain on paper towels and serve with lemon wedges.
Appx 1 cup Minced Paua
1 Onion Chopped finely
1 small cup flour
1 level teaspoon Baking Powder
Enough milk to make a pikelet like batter
Salt to taste
Heat a knob of butter in pan, get quite hot but not burning, pour batter in by the spoonful as you would big pikelets.
Cook each side until golden.
Serve with salad and potato salad - Yummy!...[more]
3 large Snapper fillets, chopped finely,
The juice of 3 lemons,
Half a bottle of cream,
1 small chopped up onion,
1 sliced tomato,
Salt and papper.
Combine the snapper, onion, seasoning and lemon juice and marinate in the fridge overnight.
Stir in the cream, decorate the top with tomato slices and chill.
Serve as an entree or with salad.
Makes 25 appx.
1/2 cup sugar,
2 cups SR flour,
1 1/2 cups milk,
Butter to cook with.
Beat eggs and sugar together - add milk, flour and salt. Mix well. Cook in spoonfuls on hot pan or girdle.

Tomato Sauce - (a bit like Watties)
3 Kg Tomatoes - washed and chopped,
3 apples - peeled and cored,
4 lge onions - chopped,
2 c Sugar,
2 1/2 c vinegar,
1 T salt,
Make a Bouquet Garni and tie in muslin or similar:
1 tsp peppercorns
1 tsp allspice
2 cloves crushed garlic
1 small chopped chilli
Boil all ingredients and then simmer together for appx. 2 hours stirring frequently. Cool, remove bag and process in food processor. Return to pot and heat, simmering for appx. 15 mins. Pour into sterilised jars....[more]
Lambs Fry and Bacon
1/2 kg of lamb's liver - soak for a minute in cold water,peel membrane off and slice thinly,
Appx 1 cup of seasoned flour in a plastic bag,
8 rashers sliced bacon,
1 oxo cube,
Butter for frying,
Dry liver and shake in bag with flour mix. Shake excess flour off.
In a large pan, saute liver & bacon in butter. When browned, add water to cover well, crumble oxo cube in and simmer, stirring frequently until reduced, thickened and cooked through. Season to taste....[more]

Thai Spring Rolls ala Carol
250g chicken or Pork Mince,1/4 Cabbage shredded thnly,1 Large Carrot (grated),2 Sring onions diced thinly,1 clove garlic chpped finely,1/2 tsp mild chilli,1 tablesp. soy sauce, 1 tablesp. sugar,1 tablesp. canola oil, extra oil for frying,spring roll wrappers.
Heat tablesp oil in pan, stirfry meat until just cooked, add everything else except wrappers and extra oil. Stir fry until just cooked. Cool - wrap into wrappers and deep fry until golden. Serve with sweet chilli sauce. Enjoy!...[more]
